Lemon Pudding

Description: This recipe was submitted in our Forum from a Community College Instructor in Arizona.  She writes: "Since I've been trying to follow Dee's advice, I've been missing pudding.  I haven't found a good, healthy substitute until now.  So far I've tried making "pudding" with both bananas and avocados, but I think the banana based one is better.  This Lemon Pudding is all natural, and the lemon flavor is fresh, tart, and sweet.  I'd love to see if other users can find other tasty combinations (like chocolate, or other fruit flavors)."

 
 
Ingredients:
1 banana
1/2 Tbsp raw honey
1-2 Tbsp unsweetened coconut flakes
juice of 1/2 of a small lemon
1/2 Tbsp olive oil or coconut oil (optional)

 

 
Preparation:
Mash the banana with a fork and mix in the rest of the ingredients with a spoon.  Alternatively, process everything in a food processor until smooth.  Makes 1 serving.

Dee writes: "This looks like a great recipe using all alkaline-forming ingredients."
