Yum! This smoothie tastes as good as it looks. There is no need to cook the beets prior to blending, but it is a good idea to scrub them with a vegetable brush under cool running water and to cut the ends off. Any time that vegetables are bright in color, it means that they are full of antioxidant power. The red pigment in beets comes from betalains, an antioxidant that protects your body from harmful free radicals. The longer beets are cooked, the more betalains are damaged and lost, so enjoy this smoothie recipe and get the full benefit of beets.

Ingredients:
2 beets, scrubbed and chopped into small pieces
1 carrot
1 cup apple juice
1 cup ice cubes
