Grilled Chicken over Hummus

Description: This is my take on a favorite restaurant appetizer.  It makes a great meal when paired with a green salad.
 
 
Ingredients:

1 container prepared Garlic Hummus (or make your own)

1/4 cup pine nuts

1 Cucumber, sliced

1/2 pound skinless chicken breast,  sliced into strips

1/4 cup chopped fresh parsely

Juice of 1/2 lemon

2-3 cloves garlic

1/4 teaspoon dried oregano

1 Tablespoon coconut oil

Dash of Herbamare seasoning salt or sea salt

 

 
Preparation:

Spoon hummus onto the center of a plate.  Set aside.

Heat coconut oil in a skillet over medium heat.  Add chicken, garlic, lemon juice, and oregano, and Herbamare. Cook chicken until tender, about 7-10 minutes.  Spoon chicken on top of the hummus.  Sprinkle with pine nuts and parsely. Arrange cucumber slices around the edge of the plate. Enjoy!
