No-Salt Cucumber Salad

Description: The cucumbers, basil and garlic lend a taste similar to salt to this cool chunky salad. Serve this simple, easy salad over fresh lettuce or spring mix, or just eat it without the greens. It makes a great snack food. You can add other veggies too, such as shredded carrots or crunchy cauliflower.
2 medium cucumbers, sliced

3 to 4 firm Roma tomatoes, quartered, then sliced

1 small Red onion, thinly sliced

1/2 cup thinly sliced fresh basil

4 cloves fresh garlic, finely chopped

cup extra virgin olive oil

cup apple cider vinegar

1 tablespoon raw honey


Combine oil, vinegar, garlic, and honey in a bowl and whisk together. Add in the rest of the ingredients. Toss well, cover and refrigerate several hours to blend flavors.
