California Salad

Description: This is a perfect blend of vegetables and cheese. Add chicken for a more balanced meal. Excellent as a first course or as a side dish. The lemon dressing gives it a tangy taste.

1 large head Romaine lettuce

3 tomatoes

10 olives

6 oz. crumbled feta cheese

6 green onions

1 grated carrot

1 avocado

2 hard boiled eggs

Juice of 1 large lemon

12 toasted almonds

3 Tbsp. olive oil

sea salt and pepper to taste


1. In a large bowl place the washed and dried lettuce leaves. Add tomato, olives, crumbled cheese, green onions, avocado, egg, carrot, and almonds. Toss gently.

2. Add lemon juice, oil, salt and pepper. Toss salad gently to coat vegetables evenly, and serve immediately.
